Your stay at Blue Spirit includes three consciously prepared gourmet vegetarian meals a day.
They serve fresh locally sourced fish three evenings per week and eggs every morning along with breakfast; cheese is also regularly available while their buffet always provides vegan and gluten-free options.

To accommodate food restrictions and allergies there’s a Pure Food option, offering veggies, grains and legumes cooked without any seasoning or oils.

Blue Spirit works with local farmers to purchase organically grown produce when available and keeps a high standard of freshness and good practices to make all their meals as delicious, healthy, and vibrant as possible.

Guests RAVE about the treats at the café. About Veronique

Originally from Montreal, Quebec, I’m a French-Canadian girl who loves the arts, yoga, coffee and finding adventure! I studied Theatre at Russell Sage College in Troy, NY. My theatre mentor guided me to move to Los Angeles to pursue film and TV. I acted in independent films, but missed my love of theatre. I formed my own non-profit theatre company, Athena Theatre, producing published TONY and Pulitzer Award Winning revival plays. I produced published and new plays in both LA and NYC for seventeen years. My love of the arts and storytelling was incredibly stressful because of the heightened emotions in the industry. I discovered yoga as a way to calm the mind and feel good in the body. I fell in love with the connection of storytelling and creative movement.

Currently based in Vero Beach, FL and a RYT (Registered Yoga Teacher with Yoga Alliance) 500 Yoga Instructor. I find inspiration off of the mat for unique and creative yoga teachings at each class. Every class is tailored to the setting, students and by an inspirational theme. I strive to empower and inspire my students to shine their light. I offer precise alignment cues as well as modifications to journey through class while mending an injury or expressing a more advanced practice. I love the use of descriptive words to guide practice and I also tune in to when to be silent, allowing space for each student to simply breathe.

I am mostly known for my smile;) I love to laugh! I am passionate, empathetic and love storytelling! I’m also adventurous and seek out travel and discovering new places. I get excited about active outings as well such as flying trapeze, rock climbing, high ropes courses and I did go sky diving once—once was enough! 🙂 I am drawn to challenges and enjoy arm balances and going upside down in my yoga practice as well as exploring creative movement.

I love serving the world by giving each person space to express themselves in a way where their light can radiate and shine for all to see. I believe I unlock physical and emotional blockages through my yoga teachings. I take great care in guiding each student on a path that is balanced between effort and ease—where they can embrace challenge while still feeling supported; ever evolving, ever growing!

The things I am most passionate about in life are wellness, mindfulness, traveling, teaching, family, friends and being the change I wish to see in the world! I’m passionate about continually challenging my beliefs, continuing to practice self-study, read and accrue new knowledge. I am passionate about recycling and limiting single use containers/bottles, not using straws and taking care of this environment.

When I’m not busy teaching you can find me practicing yoga with my dog, Bowery, or reading.

About Erin

In the year 2000, I began my career as a movement facilitator in the form of personal training. While attending Florida State University, I fell in love with the fitness world and spent many hours in the gym prepping my body and mind for fitness competitions. As a result, lots of people came to me for fitness advice and it was the natural progression to acquire my first personal training certification. I started training clients at the young age of 20 years old!

In 2004 I relocated from Florida to Los Angeles, CA and kicked off an 8 year career journey as personal trainer to the stars and aerobics instructor at Equinox Gym in West Hollywood. Equinox gym is where I first began practicing yoga in 2004 and it completely transformed my inner and outer worlds, rescuing me from depression and addiction.

Yoga taught me to go deeper, to look beyond the surface, and that we ALL have the power within to create anything we choose.

I have a passion for travel and adventure and thankfully I follow those passions. I moved to Australia in 2011 and dedicated all of myself to studying, practicing, and teaching yoga, meditation, and personal growth workshops. I have studied in places such as the Amazon Jungle, in India, in Bali, and have worked overseas sharing my work in Thailand and beyond. I’m also an Intuitive Manifesting Coach and LOVE bringing yoga into my coaching and coaching techniques into my yoga classes. Yoga teaches us to find ALIGNMENT in the body, which is KEY to manifesting our dream life! I seek out unique and creative ways to inspire my students and clients by taking them to their growth edges and inviting them to explore greater possibilities for their bodies and lives.

Certifications and Qualifications:
I have a Yoga Alliance 200hr Vinyasa certification completed at Essence of Living in Australia in 2012.
I also have a Yoga Alliance 200hr Ashtanga certification completed at One Yoga Planet in Florida in 2014.
I’ve also completed Manju Joice’s 50hr certification when he visited my studio in Florida in 2014.
I’ve been a certified personal trainer for 21 years
I’ve been an internationally certified yoga teacher for 10 years
In 2010 I completed my certification as a Holistic Health Coach through the Institute for Integrative Nutrition in New York City.
I’ve been training, facilitating, leading, coaching, and radically changing lives since 2000. That’s 22 years!

I’m known for teaching a strong yet nurturing Vinyasa practice, where I invite playfulness, exploration, and the opportunity to look at things differently.

Students often comment on the “realness” they feel in my energy and words. This is because I teach from the real life experiences I’ve had. I seek to take my students on a physical and energetic journey that opens up the whole body, the whole heart, and the whole mind. I aim to teach and facilitate in a way that leaves my students feeling uplifted but grounded, connected yet still curious, sweaty and refreshed, and energized yet deeply rested.

In my free time I enjoy long walks, date nights, snuggling under a blanket with a good book, hosting dinner parties, time at the beach, time in the mountains, traveling somewhere new, spending quality time with my family and fur babies, and I love to bake and cook! I LOVE being in the kitchen! Making food and feeding people is medicinal and meditative for me 😉
